The superman behind the kitchen is Chef Lam.

hilton (2)

The restaurant is decorated with more like Shanghai feel with Chinese painted pictures on the plate and big red lantern and classic Chinese herb shop drawer on the wall . .

Chilled alaska king crab leg, chili paste seafood skewer & brine momotaro tomato (阿拉斯加帝王蟹配海鲜桃太郎番茄)

Start of with their first dish, that it look rather simple, yet it taste delicious, was first ask to try out the king crab first, which is sweet, a bit chill and the meat is very fresh, just eat it like that is good enough, follow by the tomato – seriously I don take tomato like that, but was persuaded by the chef I have to try, that he did a special way to this tomato. Once bite inside my mouth, the juice really burst inside and so much juice in it. I have never taste so juicy tomato before and I sure do not mind to have another 3 more. Chili paste skewer is just simple and nice.

hilton (8)

Follow by Double boiled snakehead nourishing tonic soup with fresh milk and shark’s fin (滋补生鱼水奶炖翅)

Clear in taste, very mild in milk taste, and it is so appetizing that I just finish this bowl within seconds, and it was a slab of shark fin in it that I just slowly enjoy every bite of it.

hilton (9)

Stewed Short Ribs with Charcoal garlic & Roasted onion potato (壮士琵琶骨)

Among the list, this was the star of the night, just by the look and slight gravy that flow down from the meat makes me swallow my sliver before eating it. I just cut into small pieces and enjoy bit by bits, that it is so soft that nearly melt in my mouth. Really one of the best short ribs that I have come across. The fried onion rings do taste like indian herbs a bit on muruku taste. I just enjoy my pairing of roasted onion potato and the short ribs. Just perfect!

hilton (10)

Salted plum Lime Sorbet (话梅青柠雪葩)

A simple and chill appetizer that I just enjoy, cuz its lime sorbet smooth and soft.

hilton (11)

It has been quite a while since I last step into Gurney Plaza on its basement level that filled mostly with F&B outlets. Last round when I went back, while accompany my friend shopping my friend suggested this Xuan Xin Ramen Kitchen that its pretty good. To me, its like another new shop!

xuan xin (1)

Seeing this place so pack on odd hours as in 3pm and its still full house, then told my friend no problem, lets go especially anything with Ramen which is one of my favourite.

xuan xin (3)

xuan xin (4)

There are quite  a number of Ramen to choose from and price of it are pretty reasonable. Most of the Ramen selection I would say a bit in fushion style.

xuan xin (6)

Sze Chuan Dan Dan Ramen @ RM 11.80 that usual will served with lots of peanuts in the noodle, soup taste a bit spicy and thick.

xuan xin (5)

Compare to another choice, the rest of us prefer Ramen with Sze Chuan Soup @ RM 11.80. Love the taste of it, sour more than spicy also soup its a bit thick and starchy that comes to my liking. Recommended~

xuan xin (7)

I have eaten quite many Shanghai Steamed Dumpling and find that for the price of RM 5.50 which will be very precent compare to alot other restaurant. Skin might be slightly thicker compare to the others, soup base in it and texture of the meat is good!

I could say that, I certainly do not mind to return to this shop again to try out other of its range.

Food Rating 7/10, quite okay, for a outlet like this~ ~-Stamped-

Crystal Jade is no stranger to most of the locals with its operating restaurant of more than 18 years of history and has over 80 outlets in 12 major cities in Asia Pacific Region, with its based and originate from Singapore.

This restaurant not only served Cantonese Cuisine but Shanghai Delicacies has been the second most popular. As their star item in the restaurant that must not be forgotten is their Steamed soupy pork dumpling ‘Xiao Long Bao‘ and hand pulled noodle ‘La Mian‘.

I was given the opportunity to see the making 2 of their star item that I have to thanks to I May from Arcis Communications for the invites.

Steamed Soupy Pork Dumpling that commonly known as Xiau Long Bao is a dish from China Northern Song Dynasty. As it is small & delicate and steamed in a bamboo basket, hence the name ‘Xiao Long Bao‘ comes about.

The preparation process are:
1) Whisking 4 grams of high protein flour with 2 grams of cold water.
2) Knead dough weighing around 6 grams for 30 seconds.
3) Roll out the dough
4) Put ingredients consisting 22 grams of 70% lean pork meat and 30% fat port meat from pork;s neck or belly area with little seasoning.
5) Make 18-20 folds, each xiao long bau should weight around 28 grams.
6) Bring the water to boil and steam xiao long bao using a basket steamer for approximately 6 minutes.

Crystal Jade (3)

That is how the little xiau long bao is made off.
Next would be the making of La Mian. La Mian literally means ‘hand-pulled noodle’ and relates to the process of pulling a serving of noodle from top quality bread flour dough. Our chef pulls the dough to about a meter in lenght and folds it into half; doubling the number of noodle strands.

Crystal Jade (4)

Top quality bread flour with 10:4:5 portion of water is used to prepare the dough in approximately 20 minutes. For normal type of one bowl serving of noodles, it is pulled 7 times and approximately 10 seconds to cook.

Crystal Jade (5)

The noodle can be made into 3 types. Fine, medium and thick noodle.

Crystal Jade (6)

Crystal Jade (7)

This is after the made of ‘Steamed Pork Dumpling’ which had been steam and ready to eat. The soup base is sweet and aromatic which is soft in the outer skin and the base of the meat is just perfect. RM8.80

Crystal Jade (8)

Next the after effect of la mian after been cook ‘Stewed La Mian with Spicy Shredded Chicken’. Our first bite of it was quite surprise as it is served cold but the taste did not disappoint and it was good. The look of spiciness which is actually not and the chicken is soft and mix with the gravy and noodle is just perfect. RM13

Crystal Jade (9)

‘Black Fungus with Shredded celery in Sesame Oil’ is something light to accompany you. RM9.80

Crystal Jade (10)

‘Pork Dumpling with Chilli Sauce’ doesn’t look spicy but taste not bad. RM10

Crystal Jade (11)

‘Pan-fried Pork Dumpling’ dip with the sauce given is not bad. RM7.00

Crystal Jade (12)

Me with the food.

Crystal Jade (13)

If you are not looking for something heavy ‘Soup La Mian with Dried Shrimp & Peanut in Spicy Sauce’ is something you will be looking for. RM12.00

Crystal Jade (14)

‘Fried Pan-cake with Scallion & Pork Floss’ something not too salty but if a glass of beer was served and while watching soccer, this is definitely a highly recommended item. Its nice and chewy. RM10

Crystal Jade (15)

‘Chilled Water Chestnut Cream with Pomelo is something I like after meal. Clear, not too sweet yet chilled and nice. RM7.00
