You may say I am classic yet I still prefer the classic Lotus paste with single yolk. Lotus paste is smooth, and I just love the skin texture as it  is a bit like smooth sand, and aromatic skin. Perfect!

Besides this, they do offer other classic mooncake too such as  white lotus paste, lotus paste with single yolk, lotus paste with double yolk, red bean and lotus paste with single yolk and diced chicken ham with almond.

Sweetened Red Beans with Green Tea Paste

one world (14)_resize

One that stood out very well is  White Coffee Lotus Paste with Walnuts, yes, they really do it in Coffee version that the flavour is not too strong, creamy and  mild enough not to overpower the taste of the yolk and after taste of coffee is build upon your taste bud. One of a recommended one.

 Red Bean with nuts

one world (16)_resize

Comes to their snowskin version, they have pretty impressive range especially on the skin texture that I could not reveal it to you, certainly it stood up more than the rest. A bit soft chewy that pairs very well with the filling that they insert in.

Normally for mooncake, I seldom go after cold skin but this makes me fall in lurve with it, fine thin skin with aromatic taste that makes it exceptional and best of all, its not so sweet as I expected.

moon n jap (8)

One of the best thing about it, is that they are made daily and they don do much and freshness is their top priority.

moon n jap (9)

moon n jap (11)

but anything still cant beat the original of it. Still the best and with masterclass of super thin skin is created which requires alot of skills to do it.

moon n jap (12)

Sifu Dim Sum Chef Lo Tian Sion that is the one behind all of it and on that day itself, we were able to witness the making of mooncakes.

moon n jap (13)

With all the necessary ingredient prepared along,  pumpkin and charcoal seed prepared.

moon n jap (14)

Mixed all the ingredient till its like a dough. . . .

Roll it up and ready to be cut. . .

moon n jap (16)

Cut it equally in sizes . . . .

moon n jap (17)

Use a roller roll over it to make it flat. . .

moon n jap (18)

So that you can make it as a skin base and wrap over the pumkin seed. Then placed it onto the craving wood, presss it firmly till it fit the 95% of th hole .. .

moon n jap (19)

The the craving wood knock hard on both the edge and overturn it to make it fall off. Then the shape of it will be enhance as what the mould would do.
